Banana Bran muffins

Preheat to 375

1 egg (or 2 egg whites)
1/3 cup maple syrup or 1/2 cup brown sugar
3 bananas, mashed
1/3 cup oil or 1/4 cup oil and 1/4 cup flaxseed meal
1 tsp vanilla
1/2 cup raisins and/or walnuts
1/2 cup whole wheat pastry flour (or white flour)
1 cup whole wheat flour
1/2 cup wheat bran
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

opt: handful of chocolate chips

Sprinkle cinnamon sugar (or cinnamon/cardamom sugar) on the
top of each!! Makes 12 muffins. Bake 20-25
minutes. They are really healthy and absolutely
delicious. ENJOY!

Variation: For a lighter muffin, stick to the canola oil (no flax), use wheat germ instead of wheat bran, and use 1 cup of ww pastry and 1/2 cup of white whole wheat. Everything else is the same.
